Breakfast Wraps with Impossible Sausage & Tandoori-Spiced Eggs

Sometimes, breakfast needs to actually feel like a meal—not just something you rush out the door with. These Breakfast Wraps are a go-to in my kitchen when I want something hearty, protein-packed, and full of flavor that’ll carry me through the morning (or let’s be real, all day).

With fluffy eggs, sautéed peppers and onions, melty queso quesadilla cheese, and spicy-sizzling Impossible Breakfast Sausage, these wraps come together quickly and will have your kitchen smelling amazing. And if you're not afraid of a little heat and depth, toss in some Tandoori Masala—it adds a bold twist that takes these wraps to the next level.

Ingredients (Serves 2 people / 4 wraps)

Egg & Veggie Mix:

Seasonings:

  • Salt, to taste

  • Black pepper, to taste

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp paprika

  • Optional: 1/2 tsp Tandoori Masala seasoning (for extra flavor)

For the Wraps:

  • 4 tortillas (flour, burrito-size or medium)

  • 4 Impossible Breakfast Sausage patties (or equivalent amount from a roll)

  • Extra shredded cheese for filling

  • Crema (for drizzling)

  • Salsa (on the side)

Instructions

1. Scramble the Eggs & Veggies:
In a pan, heat a little olive oil over medium heat. Crack in the eggs and season with salt and black pepper.

Scramble gently. Once they start to set, stir in the shredded cheese, then add diced bell peppers and onions. Sprinkle in garlic powder, onion powder, paprika, and if you’re feeling adventurous—Tandoori Masala for that spiced kick.

Cook everything together until the eggs are fully set and veggies are softened. Remove from the pan and transfer to a plate. Set aside.

2. Cook the Impossible Sausage:
In the same pan, add a little more oil if needed and toss in your Impossible Breakfast Sausage.

Use your spatula to break it into crumbles as it softens and browns. Let it sizzle until golden and cooked through. No need to season—it’s already got great flavor. Once done, transfer to a bowl and set aside.

3. Warm the Tortillas:
Add a small splash of olive oil to the pan and lightly toast each tortilla one by one. You’re just warming them—look for light browning and crisp edges, but keep them soft enough to fold.

4. Build the Wraps:
Lay out each tortilla. Fill with a scoop of the egg and veggie mix, a spoonful of the sausage, and a sprinkle of extra shredded cheese. Fold and roll to wrap them up like burritos.

5. Serve It Up:
Drizzle a little crema over the top, plate with a side of salsa, and dig in while they’re hot and melty.
